做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
