做法:春(chūn )笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切(qiē )成(chéng )段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
