做法:洗净宰好(hǎo )鲫鱼(yú ),洗净(jìng )淮山和薏(yì )米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上擦一遍,放(fàng )两勺油,待油六成热下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好(hǎo )的(de )鲫鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小时(shí ),下盐调(diào )味即可品尝。
