做法:春笋切成片后(hòu )加(jiā )少许盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油(yóu ),放(fàng )入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清(qīng )水半掩住春(chūn )笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
