做法:春笋(sǔn )切(qiē )成片后加少(shǎo )许盐捞(lāo )出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的(de )时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
