做法(fǎ ):春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒(chǎo )1分(fèn )钟左右。再(zài )加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
