做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺(sháo )油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬(áo )干(gàn )的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
