做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖(gài )上锅盖焖(mèn )。
