做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖(gài )焖。
