做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧热(rè ),倒入2勺(sháo )油,放(fàng )入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
