做法(fǎ ):春笋切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住(zhù )春(chūn )笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均(jun1 )匀稍(shāo )收(shōu )汁时(shí )盖上(shàng )锅盖焖。
