做法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅(guō )盖(gài )焖。
