做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎(jiān )煮好(hǎo )的鲫鱼(yú )和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一(yī )个半小时,下(xià )盐调(diào )味即可品尝。
