做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候(hòu )加入盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时(shí )盖上(shàng )锅盖(gài )焖。
