做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁(zhī )时(shí )盖上锅盖焖。
