做(zuò )法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅(guō )上擦一(yī )遍(biàn ),放两勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐调(diào )味(wèi )即可品尝。
