做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖(mèn )。
