做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在(zài )锅上擦一遍,放两勺油,待油(yóu )六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入(rù )煎煮好(hǎo )的鲫鱼和(hé )其(qí )他材料(liào ),武火煮沸,转中小火煲一个(gè )半小时,下盐调(diào )味即(jí )可品尝。
