做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一(yī )小(xiǎo )块姜,热锅,用姜(jiāng )块在锅(guō )上擦一(yī )遍(biàn ),放(fàng )两勺油,待油六成热下鱼,煎(jiān )至(zhì )微黄(huáng )。煮沸(fèi )瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮(zhǔ )沸,转中小火煲一个半(bàn )小时,下盐调味即可品(pǐn )尝。
