做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
