做法:春笋切(qiē )成片后加(jiā )少(shǎo )许盐捞(lāo )出后用清水浸泡(pào ),生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩(yǎn )住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到(dào )水快(kuài )熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
