做法:春笋切(qiē )成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
