做法:春笋切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切(qiē )片(piàn ),葱(cōng )切成(chéng )段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
