做法:春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大(dà )火煮开(kāi )后转中火。煮到(dào )水快熬干的时(shí )候加(jiā )入盐(yán ),翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
