做法:春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
