做法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把(bǎ )陈皮泡软,拍(pāi )裂一(yī )小块姜,热锅,用(yòng )姜块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好(hǎo )的鲫鱼和其他材料,武(wǔ )火煮沸,转中(zhōng )小火煲一个(gè )半(bàn )小时,下盐调味即可品尝(cháng )。
