做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
