做法:洗净宰好鲫鱼(yú ),洗净淮山和(hé )薏米。用(yòng )清水把陈(chén )皮泡软(ruǎn ),拍裂(liè )一小块姜,热(rè )锅(guō ),用姜(jiāng )块在锅(guō )上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入(rù )煎煮好的鲫鱼和其他材(cái )料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可品尝。
