做法:春笋切(qiē )成片后加少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成(chéng )段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖(gài )大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
