做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量(liàng )清(qīng )水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅(guō )盖焖。
