做(zuò )法:春(chūn )笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春(chūn )笋(sǔn ),盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快(kuài )熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
