做法:春笋(sǔn )切(qiē )成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧(shāo )热,倒入2勺油(yóu ),放入(rù )生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖(mèn )。
