做法:春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁时盖上锅(guō )盖焖。
