做法(fǎ ):洗净(jìng )宰(zǎi )好(hǎo )鲫(jì )鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在锅上擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其他(tā )材料,武火煮沸,转中小火煲一(yī )个(gè )半(bàn )小时,下盐调味即可品尝(cháng )。
