做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
