做法:春笋切成片后加少(shǎo )许盐捞出(chū )后(hòu )用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬(áo )干的(de )时候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
