做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小(xiǎo )块(kuài )姜(jiāng ),热锅(guō ),用(yòng )姜(jiāng )块在锅上擦一遍,放两(liǎng )勺油,待(dài )油六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入(rù )煎(jiān )煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品尝。
