做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到(dào )水快(kuài )熬干的时候加入(rù )盐,翻炒均(jun1 )匀稍(shāo )收汁时盖(gài )上(shàng )锅(guō )盖焖。
