做法:春(chūn )笋切成片后加少许盐捞出(chū )后(hòu )用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
