做法:春(chūn )笋(sǔn )切成片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的时(shí )候加入(rù )盐(yán ),翻炒均(jun1 )匀(yún )稍收汁时盖上锅(guō )盖焖。
