做法:春笋切成片后加少许盐(yán )捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的(de )时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅(guō )盖焖(mèn )。
