做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
