做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂(liè )一小块姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放两勺油,待(dài )油(yóu )六成热(rè )下鱼(yú ),煎至微(wēi )黄(huáng )。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可(kě )品尝。
