做(zuò )法(fǎ ):春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时盖上(shàng )锅盖(gài )焖。
