做法:春笋切成(chéng )片后加少许(xǔ )盐(yán )捞出后(hòu )用清(qīng )水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
