做法:春(chūn )笋切成片后(hòu )加少许(xǔ )盐捞出(chū )后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐(yán ),翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
