做(zuò )法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把(bǎ )陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦一(yī )遍,放两勺(sháo )油(yóu ),待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和其他材料,武(wǔ )火煮沸,转中小火煲一(yī )个半小时,下盐调(diào )味即可品尝。 -
