做法:洗净宰(zǎi )好鲫鱼,洗净淮山和(hé )薏米。用清(qīng )水把陈(chén )皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至(zhì )微黄。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个(gè )半小(xiǎo )时,下盐调味即可(kě )品尝。
