做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左右。再(zài )加入(rù )生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
