做法(fǎ ):春笋切(qiē )成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
